While it is common for dessert soufflés to be made with chocolate, fruits or jams, we prefer to make ours with a combination of Orange and Grand Mariner. This sweet combination brings a level of complexity to the flavor that almost matches the complexity of the execution.
Andrew, our head chef, prefers to serve the soufflé with a sorbet, over the more traditional ice-cream, to complement the soufflés lightness and will often serve the sorbet in a brandy snap basket because they taste amazing.
